Kota Bandung dengan segala daya tarik kulinernya tak henti-henti memberikan pecinta kuliner kejutan. Bukan hanya makanan yang bisa memanjakan lidah dan perut tapi experience yang luar biasa. Maka tak salah jika Kota Bandung menyandang peringkat 5 besar Kota kuliner Asia bersama dengan Bangkok, Hongkong, New Delhi, dan Seoul (Detik.com: 2022). Kali ini Foodizz akan mengulas sebuah culinary experience menarik di tengah Kota Bandung, yang mungkin sudah pernah lewat di FYP TikTok sahabat Foodizz semua, yaitu Joongla Pop up Dining Experience di tengah pasar di Kota Bandung. Yang kabarnya cuma butuh 1 menit untuk full booked selama 2 bulan! Wah, ini edan sih. Kali ini kami akan membagikan pengalaman team Foodizz ketika makan disana dan kami akan merangkum insight menarik yang Foodizz dapatkan.
Sebelumnya, Foodizz bakal jelasin sedikit apa sih Pop up dining experience itu. Jadi konsep Pop up dining experience ini mengadaptasi konsep omakase dari Jepang dimana konsumen cukup membayar satu paket makan yang sudah terdiri dari makanan pembuka, makanan utama, dan pencuci mulut. Dimana nantinya chef akan langsung melayani konsumen secara langsung mulai dari preparation sampai makanan itu disajikan. Pop up disini mengacu ke lokasi makan yang gak biasa yaitu di dalam pasar Cihapit di Kota Bandung. Sehingga dapat menghadirkan pengalaman makan yang menarik. dimana lagi kita bakal menemukan konsep makan omakase ala Jepang dengan pelayanan ala fine dining tapi lokasinya di tengah pasar tradisional?
The Journey
Kali ini penulis bersama lima team Foodizz lainnya ikutan di episode Malu-malu Kuciang Sumatera. Jadi Joongla ini akan merilis Episode baru di tiap tiga bulan dengan tema yang berbeda-beda. Kali ini adalah khasanah kuliner Sumatera yang tersaji di episode Malu-malu Kuciang Sumatera.
Petualangan dimulai dari titik kumpul dimana kami peserta diinstruksikan untuk berkumpul di Seroja Bake yang terletak di kawasan Cihapit, Kota Bandung. Di titik kumpul ini kami langsung dipandu oleh Kak Farah Mauludynna, atau beliau biasa dipanggil dengan sebutan Teh Dynna. Teh Dynna mulai bercerita tentang konsep yang Joongla usung dan visi misi Joongla, sehingga lahirlah konsep Pop up dining experience ini. Setelah itu Teh Dynna juga menjelaskan mengapa titik kumpul pertama ini di Seroja Bake. Teh Dynna menceritakan value dari Seroja Bake dimana Seroja Bake adalah bakery with a mission. Misi Seroja Bake ingin memajukan petani lokal dengan cara mensubstitusi sebagian bahan baku yang didapatkan secara impor dengan bahan baku yang di produksi oleh petani lokal. Misi inilah yang sama-sama di usung oleh Joongla yang memprioritaskan bahan baku dari petani lokal.
Berikutnya kami diajak untuk mengenal pasar Cihapit dari sisi sejarah. Salah satunya kami ditunjukkan bangunan yang masih otentik peninggalan lama yang sekarang digunakan oleh Bakmi Tjo Kin dan Toko Kopi Djawa. Dari sana kami diajak masuk kedalam pasar melalui gang Masjid Istiqamah. Kami juga melewati salah satu destinasi wisata kuliner yang digandrungi warga Jakarta yaitu Gang Nikmat. Selama perjalanan Teh Dynna mengenalkan brand-brand kuliner lain di dalam pasar Cihapit mulai dari yang melegenda seperti Lotek Tjihapit, Warung Nasi Bu Eha, Serabi Cihapit sampai yang kekinian seperti Nasi Telur Sumber Rejeki, Bakmi Feng, Konklusi, dan masih banyak yang lainnya. Hal ini yang bikin kami makin tertarik untuk wisata kuliner di pasar Cihapit setelah ini.
Sampailah kami di depan Joongla setelah diajak muter-muter di pasar Cihapit. Pas pertama sampai tempatnya masih tertutup oleh rolling door, setelah kami sampai langsung lah kami di sambut dengan cara rolling door nya terbuka keatas dan didalamnya sudah ada dua chef yang akan melayani kami, yaitu chef Kemal dan chef Nunu. Tempatnya berbentuk seperti dapur yang terdapat enam buah kursi untuk duduk di depannya.
Setelah tour keliling pasar yang dipenuhi dengan cerita ditambah sambutan awal yang mengesankan, masuklah ke acara inti yaitu makan-makan. Tapi sebelum bercerita tentang pengalaman makannya, foodizz mau highlight sedikit tentang service nya. Pertama untuk kursi sudah ditentukan sesuai nama kita jadi Waitresss yang melayani sudah hapal nama kita berdasarkan tempat duduk yang sudah ditentukan. Jadi saat Waitress ingin mengisi air atau memberikan alat makan dengan ramah Waitress menyebut nama kita yang sudah mereka hapal “Maaf Kak Syarif permisi saya tambahkan yaa airnya”. Service ala fine dining yang juara.
Di Awal dijelaskan dulu latar belakang dari tema Malu-malu kuciang Sumatera. Malu-malu kuciang ini bermaksud jika Joongla ingin berkenalan dengan kita semua sebagai episode pertama Joongla.
Okee set makanan disini terinspirasi dari khasanah kuliner Sumatera yang kaya akan rempah, gurih, dan bersantan. Untuk makan pembuka dimulai dari dadiah yaitu yoghurt khas Sumatera Barat yang difermentasi di dalam bambu. Dadiah ini dicampur beberapa bahan seperti timun, dan makannya dengan mengolesi dadiah ini ke terong yang digoreng dengan tepung. Lalu dilanjut dengan menikmati segarnya rujak samalanga dengan citarasa asam manis pedas yang pastinya segar karena ditambah es serut jeruk kecombrang, sebuah kombinasi yang unik. Makanan berikutnya adalah mie celor Palembang menurut penulis ini si juaranya karena kuah yang kaya rempah dan rasa kaldu udang yang sangat fresh benar-benar memanjakan lidah di setiap sruputannya. Melompat ke makanan utama yaitu yang diberi judul Serambi Sumatera dada ayam yang bisa kita tau teksturnya kering dan berserat ini disulap jadi super juicy kalo di perdagingan ini si Wagyu A5 versi daging ayam, ditambah kuah yang gurih dan kental khas makanan Sumatera yang bersantan. Rangkaian hidangan ini ditutup dengan es krim kelapa yang manis dan creamy. Itu dia mungkin review singkat dari set menu Malu-malu Kuciang Sumatera dari Joongla.
Petualangan kuliner di pasar Cihapit ini ditutup dengan kami berfoto bersama dan kami dipersilahkan untuk masuk ke dalam dapurnya untuk berfoto. Sebuah pengalaman berkuliner yang benar-benar dikemas dengan mengesankan.
