FOODIZZ.ID – Bandung. Dalam skala kecil, bisnis kuliner biasanya hanya terdiri dari pemilik utama dan 3 atau 5 karyawan. Masing-masing karyawan difokuskan pada bagian dapur, kasir, pembukuan, waitress, dan kebutuhan lain. Akan tetapi beda cerita jika bisnis kuliner yang dimiliki sudah berskala besar dan memiliki lebih dari 50 karyawan. Harus ada pembagian tugas yang lebih detail serta struktur organisasional lebih ajeg atau paten, sehingga masing-masing akan fokus pada pekerjaannya.
Sebagai pemilik bisnis utama, katakanlah direktur utama, sudah tentu tidak bisa melakukan pekerjaan operasional di level karyawan biasa, ataupun pengawasan level manajer. Semua harus dilakukan melalui Helicopter View yang mana membutuhkan masukan-masukan dari para manajer atau supervisor.
Inilah kenapa Monthly Meeting atau pertemuan bulanan harus dilakukan. Berikut 3 alasan utama kenapa kegiatan tersebut harus dilakukan rutin setiap bulannya :
1. Pengecekan Laba & Rugi dan Pencocokan Keuangan
Di jaman sekarang, sudah banyak perusahaan yang menjual sistem POS (Point of Sales). Dengan adanya POS, pemilik bisnis utama bisa mengecek bagaimana keuangan harian dari restoran atau kafe yang dimilikinya. Sistem ini juga bisa digunakan untuk prediksi apakah bisnis berjalan dengan lancar atau sedang mengalami kendala.
Jika pemilik bisnis tidak melakukan hal ini. Sudah tentu akan berakibat fatal. Bisa-bisa bisnis yang baru dibentuk dalam waktu kurang dari satu tahun, hancur dalam waktu 1 bulan saja.
2. Pembuatan Program atau Produk Baru Untuk Menarik Pelanggan
Adanya rapat bulanan bisa memberikan kesempatan pada semua manajer atau supervisor yang hadir untuk memberikan masukan-masukan mengenai jenis produk atau program apa yang bisa dibuat di restoran tersebut. Katakanlah bulan Oktober mengalami lonjakan, berarti bulan November bisa dilakukan program diskon dengan tema tertentu. Bisa juga dengan ramainya menu Sate, manajer mengusulkan untuk mengeluarkan menu Sate Maranggi.
3. Prediksi Tantangan & Mendengar Kritik-Saran Konsumen
Selain memeriksa keuangan, juga pembuatan program-program baru, pemilik bisnis dan manajer harus bisa memprediksi tantangan apa yang akan terjadi kedepannya. Misalnya di bulan Oktober laba berkurang 10% padahal sudah melakukan promosi tertentu, berarti ada tantangan tertentu yang sepertinya akan terjadi di November atau bahkan Desember.
Tidak hanya itu, suara-suara konsumen juga harus turut didengarkan sehingga pemilik bisnis serta jajaran manajemen pun bisa memprediksi tantangan yang akan datang. Misalnya dari segi rasa, restoran sebelah memiliki rasa lebih manis sementara restoran kita memiliki rasa lebih tawar.
Dengan adanya 3 alasan utama tersebut, sebaiknya pemilik bisnis utama harus lebih berkomunikasi lagi dengan manajerial agar tercipta kerjasama yang lebih baik dan lebih mantap. Ada kesulitan?
